Strawberry, Avocado & Feta Summer Salad Recipe

+ 4-5 strawberries, thinly sliced
+ 1 medium avocado, sliced
+ 1/2 cup quinoa, cooked (learn here how to soak and cook whole grains)
+ 2 cups mixed salad greens
+ 2 tbsp feta, crumbled
+ 2 tbsp pistachios, shelled and roasted
+ 2 tbsp honey mustard vinaigrette
+ sea salt and freshly ground black pepper, to taste
Add salad greens to a large bowl, layer on the quinoa, strawberries, avocado slices, feta, and pistachios. Add to bowls and serve with a drizzle of honey mustard vinaigrette or your favorite salad dressing. Enjoy!
