Puffed Rice & Tahini Energy Bites Recipe
Prep Time: 5 min | Cook Time: 0 min | Yields: 5 bites
+ 1/2 cup popped rice
+ 2 tsp honey
+ 2 tsp homemade tahini
+ 1/2 tsp cocoa powder
+ 2 tbsp walnuts
Finely chop one tablespoon of walnuts and grind the other half in a food processor to get a really fine flour. In a medium-size bowl, mix the walnut flour with honey, tahini, and cocoa powder. Add the puffed rice and the chopped walnuts to the mix, and combine all the ingredients until everything is blended evenly.
Take a spoonful of the mixture and roll it between your hands to form a small ball. Eat these energy bites immediately or store them in an airtight container in the fridge for up to one week. Enjoy!
