Pork Loin with Caramelized Pineapple and Baked Potatoes Recipe

Pork loin
+ 1 pound / 450 g pork loin roast
+ 1/2 onion, sliced into half-moons
+ 2 tbsp olive oil
+ 1/4 fresh pineapple, cut into thin slices
+ 2 garlic cloves, minced
+ 1 bay leaf
+ sea salt and freshly ground black pepper, to taste
Baked potatoes
+ 3 medium potatoes, cut into small cubes
+ 1 tbsp olive oil
+ 1 tsp garlic powder
+ 1 tsp paprika
+ 2 tsp dried rosemary
+ sea salt and freshly ground black pepper, to taste
Preheat oven to 450ºF / 230ºC. Cut meat into thin slices, rub with olive oil and season with salt, pepper, garlic and bay leaf. Fit 1/2 pineapple ring in between each slice, place meat in a shallow roasting pan and roast in the preheated oven for 10-12 minutes.
Meanwhile, season potatoes with garlic, paprika, rosemary, salt, pepper, and olive oil.
Remove meat from heat, add potatoes and onion slices, then lower heat to 350ºF / 180ºC and cook for another 35 minutes, or until pork is cooked through. Serve with a green salad and enjoy!
