Peach & Pistachio Fruit Salad with Raspberry Mascarpone Recipe

+ 1/4 cup mascarpone
+ 1/4 cup Greek yogurt
+ 1/4 cup raspberries
+ 2 tbsp honey
+ 2 medium peaches, thinly sliced
+ 16 raspberries, halved
+ 1/4 cup pistachios
+ 1 tbsp honey
To make the raspberry mascarpone: Place all the ingredients in a food processor and pulse until combined.
Finely slice the peaches and arrange the slices over four plates. Add raspberries, pistachios, and drizzle honey on top. Serve the fruit salad with a few dollops of raspberry mascarpone and enjoy!
