Roots and tubers offer plenty of nutritional and health benefits and play a vital role in the human diet. They contain significant amounts of dietary fiber and are antioxidative, hypoglycemic and hypocholesterolemic. This recipe for oven-roasted root vegetables is a healthier and nutrient-rich alternative to classic roast potatoes. Use a mix of 4 or 5 different roots and tubers, such as carrots, beets, sweet potatoes, potatoes, radishes, yams and parsnips and enjoy all the different flavors and textures!

Oven Roasted Root Vegetables Recipe

Prep Time: 5 min  |  Cook Time: 45-60 min  |  Serves: 2

Ingredients
+ 1 carrot
+ 1 potato
+ 1 sweet potato
+ 1 beet
+ 5-6 small radishes
+ 1 tbsp olive oil
+ 2 tsp homemade Cajun seasoning
+ 1/4 tsp sea salt
Directions
Preheat oven to 425ºF / 200ºC and cut the veggies into small squares. Toss vegetables in a medium size bowl with Cajun seasoning, sea salt, and olive oil till evenly coated. Spread vegetables out evenly on a baking sheet in a single layer. Cook for 45-60 min, stirring once during cooking, until vegetables are tender. Serve hot or store them in an airtight container in the fridge for up to 1 week. Enjoy!
