We love to use our homemade barbecue sauce with this recipe, but if you’re in a pinch, you can use a good quality store-bought barbecue sauce with clean wholesome ingredients.

Mini Sloppy Joe Pies Recipe
Prep Time: 10 min | Cook Time: 35 min | Yields: 12 mini pies
+ 2 tbsp olive oil
+ 1 onion, thinly sliced
+ 1/4 cup celery, finely chopped
+ 1/2 green bell pepper, finely chopped
+ 12 oz (340 g) lean ground beef
+ 1/2 cup barbecue sauce (homemade recipe here)
+ 12 oz (340 g) puff pastry
+ 1/2 cup cheddar cheese, shredded
Preheat oven to 400ºF (200ºC). In a large skillet, cook onion, celery, and bell pepper in olive oil until soft, about 5 minutes. Add ground beef and cook until no longer pink, 6 minutes. Stir in barbecue sauce and bring to a boil. Reduce heat and simmer uncovered for 2 minutes, stirring occasionally.
Lightly flour the counter and roll out the puff pastry. Cut the dough into 12 circles and press each piece onto bottoms and sides of greased muffin cups. Fill with beef mixture and bake until golden brown, about 20 minutes.
Remove from oven, sprinkle with cheese and bake for another 2 minutes, until cheese is melted. Serve with a green salad and enjoy!
