Who doesn’t love tacos, tostadas, burritos, and enchiladas? This Mexican turkey stir-fry recipe made with organic turkey breast, onion, bell peppers and lime is the perfect high-protein, low-calorie filling for all those delicious Mexican recipes. Turkey is a great source of lean protein and other nutrients such as tryptophan, which produces serotonin and contributes to good quality sleep, and selenium, which is essential for your thyroid and helps regulate your metabolism. The burst of Mexican flavor comes from our homemade Mexican seasoning and you can serve this stir-fry with a selection of toppings such as chopped tomato, lettuce, shredded carrots, our chickpea tortilla chips and our avocado cream. You’ll love this recipe so much you may find yourself cooking turkey more often!

Mexican Turkey Stir-Fry Recipe

Prep Time: 5 min  |  Cook Time: 10 min  |  Serves: 2

Ingredients
+ 1/2 pound (250g) organic turkey breast meat thinly sliced
+ 1 tbsp olive oil
+ 1 medium onion, finely chopped
+ 1/3 deseeded and diced red bell pepper
+ 1/3 deseeded and diced green bell pepper
+ 2 tsp homemade mexican spice mix
+ salt to taste
+ juice of 1/2 lime
Directions
Heat the olive oil in a large skillet over medium-high heat, add turkey meat and cook until golden, about 2-3 minutes. Remove turkey meat and cook the onion and bell peppers in the meat sauce until the vegetables are soft, about 4-5 minutes. Add the turkey meat, season with salt, mexican spice mix and add the juice of 1/2 lime. Cover the skillet and let cook over low heat for 2 more minutes. Enjoy!
