Kefir has live and active cultures that stimulate your immune system to help fight diseases. Kiwis are rich in vitamin C, which increases the production of white blood cells and helps fight infections. Ginger helps to decrease inflammation, and both almonds and sunflower seeds are rich in vitamin E, which is important in regulating and maintaining immune system function.

Immunity-Boosting Oatmeal Breakfast Bowl Recipe

Prep Time: 5 min  |  Cook Time: 5 min  |  Serves: 2

Ingredients

+ 1/2 cup water
+ 1/4 cup old-fashioned rolled oats
+ 1/2 tsp cinnamon
+ 1 tsp fresh ginger, minced
+ 1 cup kefir (homemade recipe here)
+ 1-2 kiwi fruits, peeled and sliced
+ 1 banana, peeled and sliced
+ 2 tbsp blueberries
+ 1 tbsp almonds, roughly chopped and toasted
+ 1 tsp sunflower seeds, toasted

Directions

To make the oatmeal: Pour the oats and water into a small saucepan and season with cinnamon and ginger. Stir on medium-low heat until the porridge has reached your desired consistency, about 3-5 minutes.

Let the oats cool down until warm but not hot, then mix in kefir. Spoon into 2 serving bowls and top with sliced kiwi, banana, blueberries, almonds, and sunflower seeds. Enjoy!
