Gingery Lentil & Carrot Soup Recipe

+ 1/2 cup red lentils
+ 7 carrots, chopped
+ 1 1/2 inches (4 cm) fresh ginger root, peeled and grated
+ 3 cups homemade vegetable broth
+ 1 tsp sea salt
+ 1 tbsp olive oil
Add red lentils, carrots, ginger, sea salt, and vegetable stock to a large soup pot. Bring to a boil, then reduce the heat and simmer for about 25 minutes. Turn off the heat, add olive oil and puree soup using a blender until you get a velvety cream. Ladle into bowls and top with coconut milk and fresh chives. Serve with plant-based protein. Enjoy!
