This soup is rich in protein, iron, magnesium, beta-carotene, folic acid, and B-complex vitamins. And if you usually do your workouts in the afternoon and then spend the night lounging on the couch, then this soup has just the right amount of nutrition and fuel!

Gingery Lentil & Carrot Soup Recipe
Prep Time: 5 min | Cook Time: 25 min | Serves: 4
+ 1/2 cup red lentils
+ 7 carrots, chopped
+ 1 1/2 inches (4 cm) fresh ginger root, peeled and grated
+ 3 cups homemade vegetable broth
+ 1 tsp sea salt
+ 1 tbsp olive oil
For serving:
+ coconut milk
+ fresh chives
+ homemade plant-based protein
Add red lentils, carrots, ginger, sea salt, and vegetable stock to a large soup pot. Bring to a boil, then reduce the heat and simmer for about 25 minutes.
Turn off the heat, add olive oil and puree soup using a blender until you get a velvety cream.
Ladle into bowls and top with coconut milk and fresh chives. Serve with plant-based protein. Enjoy!
