Toast is an ultra comforting food, and these yummy tostadas feature egg, bacon, avocado, and kale on crisp, wholegrain toasts. You can make them in less than fifteen minutes, and they’re easy, filling, and oh so delicious!
Kale contains fiber, antioxidants, calcium, and vitamin K, and it is also a good source of vitamin C and iron. Eggs are a very good source of high-quality protein, and avocados contain many essential vitamins and minerals, and are very high in omega 3 fatty acids, the good kind of fat.
Egg, Bacon & Avocado Tostadas Recipe
Prep Time: 5 min | Cook Time: 15 min | Serves: 2
+ 1 slice bacon, diced
+ 2 cups kale, julienned
+ 1 avocado, mashed
+ 2 tsp freshly squeezed lemon juice
+ sea salt and freshly ground black pepper, to taste
+ 4 hard-boiled eggs, diced
+ 4 slices whole-grain bread, toasted (DIY recipe here)
Heat a skillet over medium-high heat, add bacon and cook until crispy, for about 5-6 minutes. Transfer to a paper towel-lined plate and set aside. Then saute the kale in the bacon fat for about 2-3 minutes.
In a large bowl, mash the avocado and stir in lemon juice, salt, and pepper.
Chop the eggs, and fold into the avocado mixture.
Add in the bacon and serve on toasted whole-grain bread with sauteed kale. Enjoy!
