Chimichurri Shrimp Pasta Recipe

Ingredients
+ 6 ounces (170g) medium shrimp, peeled and deveined
+ 5 ounces (150g) whole wheat pasta
+ 1/2 cup (50g) crumbled feta cheese
+ 1 cup washed lettuce, cut into chunks
+ 8 cherry tomatoes, sliced in quarters
+ 2 tbsp homemade chimichurri sauce
+ juice of 1/2 lime
+ 5 ounces (150g) whole wheat pasta
+ 1/2 cup (50g) crumbled feta cheese
+ 1 cup washed lettuce, cut into chunks
+ 8 cherry tomatoes, sliced in quarters
+ 2 tbsp homemade chimichurri sauce
+ juice of 1/2 lime
Directions
Cook the whole wheat pasta in boiling salted water for 12 minutes and cook the peeled and deveined shrimps also in boiling salted water for about 2-3 minutes. Once cooked, drain the pasta and the shrimps, drizzle the chimichurri sauce and the crumbled feta cheese over the top and gently toss to coat evenly. Cut 1 lime in half, squeeze the juice and toss again. Serve with a lettuce and tomato salad and enjoy!
