Just mix shredded chicken with veggies, Parmesan cheese, homemade croutons and vegan cashew mayonnaise, scoop all into a salad bowl and dig in.
Chicken Caesar Salad with Homemade Croutons Recipe

Croutons
+ 2 slices whole grain bread, cut into small cubes
+ 2 tsp olive oil
+ 1 tsp garlic powder
+ 1 tsp dried oregano
Chicken Caesar Salad
+ 1 rotisserie chicken breast, shredded
+ 4 cherry tomatoes, quartered
+ 1/2 cucumber, chopped
+ 2-3 radishes, thinly sliced
+ 2 cups assorted salad greens, rinsed and dried
+ 2 tbsp Parmesan cheese, grated
+ 2 tbsp vegan cashew mayonnaise
To make the croutons: Preheat oven to 350ºF / 175ºC. Toss bread in a medium-size bowl with dried oregano, garlic powder, and olive oil till evenly coated. Spread bread cubes out evenly on a baking sheet and bake for 15 minutes or until browned. Serve in soups or salads.
Divide the ingredients equally between two serving bowls or plates, sprinkle Parmesan cheese and drizzle vegan mayonnaise on top. Enjoy!
