This gluten-free pancake recipe has only 200 calories per serving and is high in fiber, protein, vitamin C, iron, calcium, and antioxidants. There’s no added sugar in the batter, so if you prefer, you can drizzle one teaspoon of raw honey or maple syrup on top or add a few more blueberries instead.

Blueberry Banana Pancakes Recipe
Prep Time: 5 min | Cook Time: 8 min | Yields: 4 pancakes
+ 1 egg
+ 1/2 cup oat flour
+ 2/3 cup natural Greek yogurt
+ 1 banana
+ 1/2 cup blueberries
+ 1/4 tsp baking soda
+ 1 tsp raw honey to serve or 1 tsp of our delicious chocolate hazelnut spread
Beat the egg, oatmeal flour, yogurt, 1/2 banana, and the baking soda in a medium bowl until blended. Lightly coat a nonstick skillet with coconut oil and heat over medium-low heat. Pour in 1/4 of the batter, add a few blueberries and cook the first side until bubbles start to appear over the top of the pancake. Flip carefully, cook the other side for about a minute, and repeat three more times until you run out of batter.
Serve with the remaining 1/2 banana and blueberries, and drizzle 1 tsp of honey over the top. Enjoy!
