Beetroots are a good source of iron and folate, and they’re also rich in antioxidants. One of those antioxidants is betanin, a strong pigment that gives beets that vibrant red color and is perfect for creating a natural pink food coloring. You can use it for dying icing and frostings, to bake cakes and muffins or to make this vegan avocado and mango pink sushi.
Fruits, vegetables, and spices have strong pigments and are ideal for homemade food coloring. Use spinach, spirulina or chlorella to color dishes green, add turmeric to give food a yellow vibrant color and use beets or blueberries for a pink/red hue. With these natural food colorings, you get all the health benefits of the ingredients with great results too!
Avocado & Mango Vegan Pink Sushi Recipe
Prep Time: 20 min | Cook Time: 20 min | Serves: 2
+ 2 cups water
+ 5 tbsp apple cider vinegar
+ 1 small beet
+ pinch sea salt
+ 1 mango, cut into thin strips
+ 2 carrots, cut into thin strips
+ 1 cucumber, deseeded and cut into thin strips
+ 1 red bell pepper, cut into thin strips
+ tamari sauce
To make the rice: Wash the rice thoroughly until the water comes out clear. Heat the water in a cooking pan over medium heat, add the salt and, when the water starts to boil, add the rice. Let simmer for about 10 minutes or until all the water evaporates. Turn off the heat, cover the pan and let sit for another 10 minutes. Transfer the rice to a mixing bowl and let cool. Add apple cider vinegar and mix gently.
To make pink food coloring: Wash and peel the beetroot, then pop it into your food processor for about 2 minutes until it forms a paste. Press the beetroot paste through a strainer, to separate the pulp from the juice. Then add 2-3 tablespoons of beet juice to the rice and mix until the desired color is obtained.
To make the sushi rolls: Place a nori sheet on top of a rolling mat with the rough side facing upward. Add pink rice on top and spread it evenly, leaving about an inch of nori without rice at the top. Place a few strips of avocado, mango, carrot, cucumber and bell pepper in the middle of the rice and roll the sushi with the bamboo mat. Wet a sharp knife and cut the roll into the desired size. Serve with tamari sauce and enjoy!
